Ingredients
- 1 medium cauliflower, cut into florets
- 1/2 cup plain Greek yogurt
- 2 tablespoons tikka masala paste
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded red cabbage
- 1/2 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Step 1: In a large bowl, combine the Greek yogurt, tikka masala paste, olive oil, garlic powder, cumin powder, salt, and black pepper to create the marinade.
- Step 2: Add the cauliflower florets to the marinade and toss until they are evenly coated.
- Step 3: Preheat the air fryer to 400°F (200°C).
- Step 4: Place the marinated cauliflower florets in the air fryer basket in a single layer and cook for 12-15 minutes, shaking the basket halfway through, until the cauliflower is golden and tender.
- Step 5: Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Step 6: Assemble the tacos by placing a few pieces of air-fried cauliflower on each tortilla.
- Step 7: Top with shredded red cabbage and chopped fresh cilantro.
- Step 8: Serve the tacos with lime wedges on the side for squeezing over the top before eating.
