Air Fryer Sushi Bites

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori, cut into small squares
  • 1 avocado, sliced
  • 4 ounces smoked salmon, cut into small pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • 1 tablespoon pickled ginger, chopped
  • 1 teaspoon wasabi, optional

Instructions

  1. Step 1: Rinse the sushi rice under cold water until the water runs clear.
  2. Step 2: Combine the rice and water in a saucepan, bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the water is absorbed.
  3. Step 3: Remove the rice from heat and let it sit, covered, for 10 minutes. Transfer the rice to a large bowl.
  4. Step 4: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour over the rice and gently fold to combine. Let the rice cool completely.
  5. Step 5: Preheat the air fryer to 400°F (200°C).
  6. Step 6: With wet hands, form the cooled rice into small balls or discs. Press a piece of nori onto each rice ball.
  7. Step 7: Top each rice bite with a slice of avocado and a piece of smoked salmon.
  8. Step 8: Arrange the sushi bites in the air fryer basket, ensuring they are not touching each other.
  9. Step 9: Air fry for 6-8 minutes until the edges of the nori are crispy.
  10. Step 10: Serve the sushi bites with soy sauce, sesame seeds, pickled ginger, and wasabi on the side.
