Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup apple cider
- 1 tablespoon apple cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon butter
- Fresh thyme sprigs for garnish (optional)
Instructions
- Step 1: Season the pork chops generously with salt and pepper on both sides.
- Step 2: In a large skillet, heat the olive oil over medium-high heat.
- Step 3: Add the pork chops to the skillet and sear for 4-5 minutes on each side, until they are golden brown.
- Step 4: Remove the pork chops from the skillet and set them aside on a plate.
- Step 5: In the same skillet, add the apple cider, apple cider vinegar, brown sugar, Dijon mustard, thyme, cinnamon, and nutmeg. Stir well to combine and bring to a simmer.
- Step 6: Return the pork chops to the skillet, nestling them into the apple cider mixture.
- Step 7: Reduce the heat to low, cover the skillet, and let the pork chops cook for about 10-15 minutes, or until they reach an internal temperature of 145°F (63°C).
- Step 8: Once cooked, remove the pork chops from the skillet and let them rest for a few minutes.
- Step 9: Add the butter to the skillet and stir until melted, creating a glaze.
- Step 10: Serve the pork chops drizzled with the apple cider glaze and garnish with fresh thyme sprigs if desired.
