A classic apple pie with a beautifully woven lattice crust, filled with sweet and spiced apples for a perfect dessert.

Apple Pie

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 cups thinly sliced, peeled apples (such as Granny Smith or Honeycrisp)
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 egg yolk
  • 1 tablespoon milk

Instructions

  1. Step 1: In a large bowl, mix together flour, salt, and sugar for the crust.
  2. Step 2: Add diced butter and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
  3. Step 3: Stir in ice water, a tablespoon at a time, until the dough holds together.
  4. Step 4: Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. Step 5: Preheat oven to 425°F (220°C).
  6. Step 6: In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice for the filling.
  7. Step 7: Roll out one dough disc on a floured surface to fit a 9-inch pie pan, place the dough in the pan, and trim the edges.
  8. Step 8: Fill the crust with the apple mixture and dot with butter.
  9. Step 9: Roll out the second dough disc and cut into strips to create a lattice top, weaving the strips over the filling.
  10. Step 10: Mix egg yolk with milk and brush over the lattice crust.
  11. Step 11: Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35 to 40 minutes, or until the apples are soft and the crust is golden brown.
