Fluffy banana pancakes with a hint of vanilla, perfect for a cozy breakfast or brunch.
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- Butter or oil for cooking
- Maple syrup, for serving
- Sliced bananas, for serving (optional)
Instructions
- Step 1: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Step 2: In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
- Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined; it's okay if there are a few lumps.
- Step 4: Gently fold in the mashed bananas until evenly distributed throughout the batter.
- Step 5: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Step 6: Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Step 7: Flip the pancakes and cook for another 2-3 minutes, or until golden brown and cooked through.
- Step 8: Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter.
- Step 9: Serve the pancakes warm with maple syrup and sliced bananas if desired.
