These classic beef enchiladas are loaded with flavorful ground beef, wrapped in soft tortillas, and topped with melted cheese and rich enchilada sauce.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 lb ground beef
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream (optional for serving)
Instructions
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large skillet, heat olive oil over medium heat and sauté the onion until translucent.
- Step 3: Add the garlic and cook for another minute until fragrant.
- Step 4: Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it up with a spoon.
- Step 5: Stir in chili powder, cumin, salt, and black pepper, and cook for another minute.
- Step 6: Pour in half of the enchilada sauce and mix well with the beef mixture.
- Step 7: Fill each tortilla with a portion of the beef mixture and a sprinkle of cheese, then roll them up and place seam-side down in a baking dish.
- Step 8: Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Step 9: Sprinkle the remaining cheese on top and bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
- Step 10: Garnish with chopped cilantro and serve with sour cream if desired.
