These classic beef enchiladas are loaded with flavorful ground beef, wrapped in soft tortillas, and topped with melted cheese and rich enchilada sauce.

Beef Enchiladas

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream (optional for serving)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large skillet, heat olive oil over medium heat and sauté the onion until translucent.
  3. Step 3: Add the garlic and cook for another minute until fragrant.
  4. Step 4: Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it up with a spoon.
  5. Step 5: Stir in chili powder, cumin, salt, and black pepper, and cook for another minute.
  6. Step 6: Pour in half of the enchilada sauce and mix well with the beef mixture.
  7. Step 7: Fill each tortilla with a portion of the beef mixture and a sprinkle of cheese, then roll them up and place seam-side down in a baking dish.
  8. Step 8: Pour the remaining enchilada sauce evenly over the rolled tortillas.
  9. Step 9: Sprinkle the remaining cheese on top and bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  10. Step 10: Garnish with chopped cilantro and serve with sour cream if desired.
