Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
Instructions
- Step 1: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Step 2: Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
- Step 3: In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Step 4: Return the browned beef to the pot.
- Step 5: Stir in the beef broth, tomato paste, thyme, rosemary, and bay leaf. Bring to a boil.
- Step 6: Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beef is tender.
- Step 7: Add the carrots, potatoes, and celery to the pot. Season with salt and pepper.
- Step 8: Continue to simmer for another 30-40 minutes until the vegetables are tender.
- Step 9: If you prefer a thicker stew, mix the flour with a little water to create a slurry, then stir it into the stew and cook for an additional 5-10 minutes.
- Step 10: Remove the bay leaf before serving. Enjoy your hearty beef stew!
