Black Bean Burger

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 egg
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 hamburger buns
  • 4 slices cheddar cheese (optional)
  • Lettuce, tomato slices, and avocado for serving

Instructions

  1. Step 1: In a large bowl, mash the black beans with a fork or potato masher until mostly smooth with some chunks remaining.
  2. Step 2: Add breadcrumbs, red onion, cilantro, egg, cumin, garlic powder, smoked paprika, salt, and pepper to the mashed beans and mix until well combined.
  3. Step 3: Form the mixture into 4 equal patties, pressing firmly to ensure they hold together.
  4. Step 4: Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, until they are browned and heated through.
  5. Step 5: If using cheese, place a slice on top of each patty during the last minute of cooking, cover the skillet, and allow the cheese to melt.
  6. Step 6: Toast the hamburger buns in the oven or on a skillet until lightly browned.
  7. Step 7: Assemble the burgers by placing each patty on a bun and topping with lettuce, tomato slices, and avocado.
  8. Step 8: Serve immediately and enjoy your delicious black bean burgers!
