Tender and flavorful, this classic beef brisket is slow-cooked to perfection in a rich sauce with onions and red wine.

Ingredients

  • 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1/4 cup tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Step 1: Preheat your oven to 300°F (150°C).
  2. Step 2: Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  3. Step 3: Season the brisket generously with salt and pepper, then sear it in the pot until browned on all sides, about 4 minutes per side.
  4. Step 4: Remove the brisket and set aside. In the same pot, add onions and cook until softened, about 5 minutes.
  5. Step 5: Stir in the garlic and cook for an additional minute until fragrant.
  6. Step 6: Add beef broth, red wine, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, thyme, and bay leaves to the pot. Stir to combine.
  7. Step 7: Return the brisket to the pot, ensuring it is covered with the liquid. Bring to a simmer.
  8. Step 8: Cover the pot with a lid and transfer to the preheated oven. Cook for 3-4 hours, or until the brisket is fork-tender.
  9. Step 9: Once cooked, remove the brisket from the pot and let it rest for 10 minutes before slicing.
  10. Step 10: Serve the sliced brisket with the sauce from the pot poured over the top.
