Brunswick Stew is a hearty, flavorful Southern dish packed with tender chicken, smoked sausage, and a medley of vegetables.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken thighs
- 1 pound smoked sausage, sliced
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup frozen corn
- 1 cup frozen lima beans
- 2 cups peeled and diced potatoes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Instructions
- Step 1: Heat the vegetable oil in a large pot over medium heat.
- Step 2: Add the chicken thighs to the pot and cook until browned on all sides, then remove and set aside.
- Step 3: In the same pot, add the sliced sausage and cook until browned, then add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Step 4: Return the chicken to the pot and add the chicken broth, diced tomatoes, corn, lima beans, and potatoes.
- Step 5: Stir in the Worcestershire sauce, salt, black pepper, and smoked paprika.
- Step 6: Bring the stew to a boil, then reduce the heat and simmer for about 45 minutes, or until the chicken is tender and the potatoes are cooked through.
- Step 7: Remove the chicken thighs, shred them with two forks, and return the shredded chicken to the pot.
- Step 8: Simmer for an additional 10 minutes to allow the flavors to meld together.
- Step 9: Serve the stew hot, garnished with fresh herbs if desired.
