Brunswick Stew

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken thighs
  • 1 pound smoked sausage, sliced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup frozen corn
  • 1 cup frozen lima beans
  • 2 cups peeled and diced potatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Step 1: Heat the vegetable oil in a large pot over medium heat.
  2. Step 2: Add the chicken thighs to the pot and cook until browned on all sides, then remove and set aside.
  3. Step 3: In the same pot, add the sliced sausage and cook until browned, then add the chopped onion and minced garlic, sautéing until the onion is translucent.
  4. Step 4: Return the chicken to the pot and add the chicken broth, diced tomatoes, corn, lima beans, and potatoes.
  5. Step 5: Stir in the Worcestershire sauce, salt, black pepper, and smoked paprika.
  6. Step 6: Bring the stew to a boil, then reduce the heat and simmer for about 45 minutes, or until the chicken is tender and the potatoes are cooked through.
  7. Step 7: Remove the chicken thighs, shred them with two forks, and return the shredded chicken to the pot.
  8. Step 8: Simmer for an additional 10 minutes to allow the flavors to meld together.
  9. Step 9: Serve the stew hot, garnished with fresh herbs if desired.
