Ingredients
- 4 cups buttermilk
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (optional, for heat)
- 4-5 pounds chicken pieces (legs, thighs, breasts, wings)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- Vegetable oil (for frying)
Instructions
- Step 1: In a large bowl, whisk together the buttermilk, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- Step 2: Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Step 3: In another bowl, combine the flour, baking powder, salt, black pepper, and paprika. Mix well.
- Step 4: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to ensure an even coating.
- Step 5: Heat 2-3 inches of vegetable oil in a deep skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C).
- Step 6: Carefully add the chicken pieces to the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
- Step 7: Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Step 8: Remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil.
- Step 9: Let the chicken rest for a few minutes before serving.
