Cauliflower Alfredo Zoodles

Ingredients

  • 1 medium cauliflower, chopped
  • 3 cups zucchini noodles (zoodles)
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts
  • 1 lemon, zested and juiced
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. Step 1: Steam the cauliflower until tender, about 10 minutes, then transfer to a blender.
  2. Step 2: Add chicken broth, Parmesan cheese, heavy cream, and a pinch of salt to the blender with the cauliflower, and blend until smooth.
  3. Step 3: Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  4. Step 4: Season chicken breasts with salt, pepper, and half of the lemon zest.
  5. Step 5: Cook chicken in the skillet, about 5-6 minutes per side, until golden brown and cooked through.
  6. Step 6: Remove chicken from the skillet and let it rest while you prepare the zoodles.
  7. Step 7: In the same skillet, add remaining olive oil and minced garlic, sauté for 1 minute until fragrant.
  8. Step 8: Add zoodles to the skillet and sauté for 2-3 minutes until just tender.
  9. Step 9: Pour cauliflower Alfredo sauce over the zoodles, stirring to coat evenly, then remove from heat.
  10. Step 10: Slice the chicken and place on top of the zoodles, then sprinkle with parsley and remaining lemon zest and juice.
