Ingredients
- 1 large head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup red wine vinegar
- 1/2 cup extra-virgin olive oil
- Salt to taste
Instructions
- Step 1: Remove the leaves and trim the stem of the cauliflower, keeping the core intact.
- Step 2: Slice the cauliflower into 1-inch thick steaks, yielding about 3 to 4 steaks.
- Step 3: In a small bowl, mix together olive oil, smoked paprika, garlic powder, salt, and pepper.
- Step 4: Brush the cauliflower steaks on both sides with the seasoned olive oil mixture.
- Step 5: Preheat the air fryer to 400°F (200°C).
- Step 6: Place the cauliflower steaks in the air fryer basket in a single layer, cooking in batches if necessary.
- Step 7: Air fry the cauliflower steaks for 10-15 minutes, flipping halfway through, until golden brown and tender.
- Step 8: While the cauliflower is cooking, make the chimichurri by combining parsley, cilantro, garlic, red pepper flakes, red wine vinegar, and extra-virgin olive oil in a bowl.
- Step 9: Stir the chimichurri until well mixed and season with salt to taste.
- Step 10: Serve the air-fried cauliflower steaks hot, drizzled generously with chimichurri sauce.
