A classic cherry pie bursting with juicy cherries and a flaky, buttery crust.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 4 cups fresh or frozen pitted cherries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract
- 1 tablespoon butter, diced
- 1 egg
- 1 tablespoon milk
Instructions
- Step 1: In a large bowl, combine flour and salt.
- Step 2: Cut in the butter until the mixture resembles coarse crumbs.
- Step 3: Stir in the ice water a tablespoon at a time until the dough comes together.
- Step 4: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Step 5: Preheat the oven to 375°F (190°C).
- Step 6: In a large saucepan, combine cherries, sugar, cornstarch, lemon juice, and almond extract.
- Step 7: Cook over medium heat, stirring frequently, until the mixture thickens and bubbles, about 10 minutes.
- Step 8: Roll out half of the dough on a floured surface to fit a 9-inch pie plate.
- Step 9: Place the rolled dough into the pie plate and pour the cherry filling over it.
- Step 10: Dot the filling with diced butter.
- Step 11: Roll out the remaining dough and place over the filling, sealing and crimping the edges.
- Step 12: Beat together the egg and milk, and brush over the top crust.
- Step 13: Cut slits in the top crust to allow steam to escape.
- Step 14: Bake in the preheated oven for 45 to 50 minutes until the crust is golden brown and the filling is bubbly.
- Step 15: Let the pie cool on a wire rack before serving.
