A classic cherry pie bursting with juicy cherries and a flaky, buttery crust.

Cherry Pie

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 4 cups fresh or frozen pitted cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 1 tablespoon butter, diced
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. Step 1: In a large bowl, combine flour and salt.
  2. Step 2: Cut in the butter until the mixture resembles coarse crumbs.
  3. Step 3: Stir in the ice water a tablespoon at a time until the dough comes together.
  4. Step 4: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Step 5: Preheat the oven to 375°F (190°C).
  6. Step 6: In a large saucepan, combine cherries, sugar, cornstarch, lemon juice, and almond extract.
  7. Step 7: Cook over medium heat, stirring frequently, until the mixture thickens and bubbles, about 10 minutes.
  8. Step 8: Roll out half of the dough on a floured surface to fit a 9-inch pie plate.
  9. Step 9: Place the rolled dough into the pie plate and pour the cherry filling over it.
  10. Step 10: Dot the filling with diced butter.
  11. Step 11: Roll out the remaining dough and place over the filling, sealing and crimping the edges.
  12. Step 12: Beat together the egg and milk, and brush over the top crust.
  13. Step 13: Cut slits in the top crust to allow steam to escape.
  14. Step 14: Bake in the preheated oven for 45 to 50 minutes until the crust is golden brown and the filling is bubbly.
  15. Step 15: Let the pie cool on a wire rack before serving.
