Chicken and Dumplings

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Step 1: Heat olive oil in a large pot over medium heat and add the chopped onion, carrots, and celery, cooking until softened, about 5 minutes.
  2. Step 2: Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Step 3: Add chicken broth, chicken breasts, salt, pepper, and thyme to the pot, bringing it to a boil.
  4. Step 4: Reduce the heat to a simmer, cover, and cook for 20 minutes or until the chicken is cooked through.
  5. Step 5: Remove the chicken breasts from the pot, shred them with two forks, and return the shredded chicken to the pot along with the frozen peas.
  6. Step 6: In a medium bowl, whisk together flour, baking powder, and salt. Stir in the milk and melted butter until just combined to form a dough.
  7. Step 7: Drop spoonfuls of the dough onto the simmering chicken mixture, cover the pot, and cook for an additional 15 minutes until the dumplings are cooked through and fluffy.
  8. Step 8: Serve hot, ensuring each bowl has plenty of chicken, vegetables, broth, and dumplings.
