These hearty chicken burritos are packed with flavor and easy to make, perfect for a satisfying family meal.

Chicken Burrito

Ingredients

  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Step 1: Cook the white rice according to package instructions and set aside.
  2. Step 2: Cut the chicken breasts into small bite-sized pieces.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  4. Step 4: Cook the chicken for about 7-10 minutes, or until fully cooked and no longer pink inside.
  5. Step 5: Warm the black beans in a small saucepan over low heat or in the microwave until heated through.
  6. Step 6: Lay each tortilla flat and evenly distribute the cooked rice, chicken, black beans, shredded cheddar cheese, and salsa down the center of each tortilla.
  7. Step 7: Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to form a burrito.
  8. Step 8: Optional: Heat a clean skillet over medium heat and place each burrito seam-side down to toast for 1-2 minutes on each side until golden brown.
  9. Step 9: Serve each burrito with a dollop of sour cream and a sprinkle of chopped cilantro on top.
