Chicken Cacciatore is a rustic Italian dish featuring tender chicken simmered with tomatoes, bell peppers, and herbs for a comforting meal.
Ingredients
- 4 bone-in chicken thighs
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 cup dry white wine
- 1 can (14 ounces) crushed tomatoes
- 1/2 cup chicken broth
- 1/4 cup chopped fresh basil
- Cooked pasta or crusty bread for serving
Instructions
- Step 1: Season the chicken thighs with salt and black pepper on both sides.
- Step 2: Heat olive oil in a large skillet over medium-high heat and brown the chicken thighs on both sides, about 5 minutes per side. Remove the chicken and set aside.
- Step 3: In the same skillet, add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are softened, about 5 minutes.
- Step 4: Stir in the oregano and thyme, then pour in the white wine, scraping up any brown bits from the bottom of the skillet.
- Step 5: Add the crushed tomatoes and chicken broth, stirring to combine. Bring to a simmer.
- Step 6: Return the chicken thighs to the skillet, cover, and cook over low heat for 30 minutes, until the chicken is cooked through and tender.
- Step 7: Stir in the fresh basil before serving.
- Step 8: Serve the Chicken Cacciatore over cooked pasta or with crusty bread.
