Chicken Cacciatore is a rustic Italian dish featuring tender chicken simmered with tomatoes, bell peppers, and herbs for a comforting meal.

Chicken Cacciatore

Ingredients

  • 4 bone-in chicken thighs
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup dry white wine
  • 1 can (14 ounces) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh basil
  • Cooked pasta or crusty bread for serving

Instructions

  1. Step 1: Season the chicken thighs with salt and black pepper on both sides.
  2. Step 2: Heat olive oil in a large skillet over medium-high heat and brown the chicken thighs on both sides, about 5 minutes per side. Remove the chicken and set aside.
  3. Step 3: In the same skillet, add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are softened, about 5 minutes.
  4. Step 4: Stir in the oregano and thyme, then pour in the white wine, scraping up any brown bits from the bottom of the skillet.
  5. Step 5: Add the crushed tomatoes and chicken broth, stirring to combine. Bring to a simmer.
  6. Step 6: Return the chicken thighs to the skillet, cover, and cook over low heat for 30 minutes, until the chicken is cooked through and tender.
  7. Step 7: Stir in the fresh basil before serving.
  8. Step 8: Serve the Chicken Cacciatore over cooked pasta or with crusty bread.
