A comforting and hearty chicken casserole with tender chicken, creamy rice, and melted cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup uncooked white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups chicken broth
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: Heat olive oil in a large skillet over medium-high heat.
- Step 3: Season the chicken breasts with salt, pepper, and garlic powder, then brown them in the skillet for about 3 minutes on each side until golden.
- Step 4: In a large mixing bowl, combine the rice, cream of chicken soup, cream of mushroom soup, chicken broth, mixed vegetables, thyme, and paprika.
- Step 5: Spread the rice mixture evenly in a 9x13 inch baking dish.
- Step 6: Arrange the browned chicken breasts on top of the rice mixture.
- Step 7: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Step 8: Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Step 9: Let the casserole rest for 5 minutes before serving.
