These savory chicken enchiladas are filled with tender chicken and topped with a rich enchilada sauce and melted cheese, perfect for a comforting meal.
Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups cooked chicken, shredded
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups red enchilada sauce
- 8 large corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
Instructions
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Heat the vegetable oil in a large skillet over medium heat and sauté the onion and garlic until soft.
- Step 3: Add the shredded chicken, cumin, chili powder, salt, and pepper to the skillet, stirring to combine, then remove from heat.
- Step 4: Spread 1/2 cup of enchilada sauce evenly on the bottom of a 9x13 inch baking dish.
- Step 5: Warm the corn tortillas slightly to make them pliable, then fill each with the chicken mixture and a sprinkle of cheese, rolling them tightly.
- Step 6: Place the rolled tortillas seam-side down in the prepared baking dish.
- Step 7: Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
- Step 8: Bake in the preheated oven for 20 minutes, or until the cheese is bubbling and golden brown.
- Step 9: Remove from the oven and let it cool slightly before serving.
- Step 10: Top with sour cream and cilantro before serving.
