These savory chicken enchiladas are filled with tender chicken and topped with a rich enchilada sauce and melted cheese, perfect for a comforting meal.

Chicken Enchiladas

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups cooked chicken, shredded
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups red enchilada sauce
  • 8 large corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Heat the vegetable oil in a large skillet over medium heat and sauté the onion and garlic until soft.
  3. Step 3: Add the shredded chicken, cumin, chili powder, salt, and pepper to the skillet, stirring to combine, then remove from heat.
  4. Step 4: Spread 1/2 cup of enchilada sauce evenly on the bottom of a 9x13 inch baking dish.
  5. Step 5: Warm the corn tortillas slightly to make them pliable, then fill each with the chicken mixture and a sprinkle of cheese, rolling them tightly.
  6. Step 6: Place the rolled tortillas seam-side down in the prepared baking dish.
  7. Step 7: Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
  8. Step 8: Bake in the preheated oven for 20 minutes, or until the cheese is bubbling and golden brown.
  9. Step 9: Remove from the oven and let it cool slightly before serving.
  10. Step 10: Top with sour cream and cilantro before serving.
