Chicken Marsala is a classic Italian-American dish featuring tender chicken breasts simmered in a rich and flavorful Marsala wine sauce with mushrooms.

Chicken Marsala

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 3/4 cup Marsala wine
  • 3/4 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Step 1: Pound the chicken breasts to an even thickness of about 1/2 inch.
  2. Step 2: In a shallow dish, mix together the flour, salt, and pepper.
  3. Step 3: Dredge each chicken breast in the flour mixture, shaking off any excess.
  4. Step 4: Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  5. Step 5: Add the chicken breasts to the skillet and cook until golden brown on each side, about 3-4 minutes per side, then remove and set aside.
  6. Step 6: In the same skillet, add the remaining butter and sliced mushrooms, sautéing until they are browned and tender.
  7. Step 7: Pour in the Marsala wine and chicken broth, stirring to scrape up any browned bits from the bottom of the skillet.
  8. Step 8: Bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes until the sauce has reduced slightly.
  9. Step 9: Stir in the heavy cream and return the chicken to the skillet, cooking for another 5 minutes until the chicken is cooked through and the sauce has thickened.
  10. Step 10: Garnish with chopped parsley and serve immediately.
