Chicken Marsala Rice Casserole Recipe

Ingredients

  • 3 cups cooked rice
  • 1 ½ pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 ½ cup mushrooms, sliced
  • 1 ½ medium onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cup Marsala wine
  • 1 ½ cup chicken broth
  • 1 ½ cup shredded mozzarella cheese
  • 1 ½ teaspoon dried thyme
  • 1 ½ teaspoon dried oregano
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 ½ tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: In a large skillet, heat the olive oil and butter over medium heat.
  3. Step 3: Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent.
  4. Step 4: Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
  5. Step 5: Stir in the chicken pieces and cook until they are no longer pink, about 5-7 minutes.
  6. Step 6: Pour in the Marsala wine and chicken broth, then add the dried thyme, dried oregano, salt, and pepper. Bring to a simmer.
  7. Step 7: Let the mixture simmer for about 10 minutes to reduce slightly.
  8. Step 8: In a large mixing bowl, combine the cooked rice with the chicken and mushroom mixture. Mix well.
  9. Step 9: Transfer the rice mixture into a greased 9x13-inch baking dish.
  10. Step 10: Sprinkle the shredded mozzarella cheese evenly over the top.
  11. Step 11: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  12. Step 12: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  13. Step 13: Once done, remove from the oven and let it cool for a few minutes.
  14. Step 14: Garnish with chopped parsley before serving.
