Chicken Piccata is a classic Italian dish featuring tender chicken breasts in a tangy lemon-caper sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and freshly ground black pepper to taste
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup chicken broth
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Step 1: Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.
- Step 2: Season the flour with salt and pepper, then dredge each chicken breast in the flour, shaking off any excess.
- Step 3: In a large skillet over medium-high heat, heat the olive oil and 2 tablespoons of butter.
- Step 4: Add the chicken breasts to the skillet, cooking until golden brown on both sides and cooked through, about 3-4 minutes per side. Remove the chicken and set aside.
- Step 5: In the same skillet, add the white wine, lemon juice, and chicken broth, scraping up any brown bits from the bottom of the pan.
- Step 6: Bring the mixture to a simmer and cook for about 2 minutes, then add the capers and the remaining 2 tablespoons of butter, stirring until the sauce is smooth.
- Step 7: Return the chicken to the skillet, spooning the sauce over the top, and cook for an additional 2 minutes to heat through.
- Step 8: Garnish the chicken with chopped parsley before serving.
