Chicken Pot Pie

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen corn
  • 1/2 cup chopped onion
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 package refrigerated pie crusts (2 crusts)

Instructions

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Step 3: Stir in the flour and cook for 1 minute to make a roux.
  4. Step 4: Gradually whisk in the chicken broth and milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  5. Step 5: Add the diced chicken, peas, carrots, corn, salt, pepper, garlic powder, and onion powder. Mix well and remove from heat.
  6. Step 6: Roll out one pie crust and place it in a 9-inch pie dish.
  7. Step 7: Pour the chicken filling into the pie crust, spreading it evenly.
  8. Step 8: Cover with the second pie crust, sealing the edges and cutting slits in the top to allow steam to escape.
  9. Step 9: Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  10. Step 10: Let the pot pie cool for a few minutes before serving. Enjoy!
