Ingredients
- 2 cups cooked chicken, diced
- 1 cup frozen peas and carrots
- 1/2 cup frozen corn
- 1/2 cup chopped onion
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 package refrigerated pie crusts (2 crusts)
Instructions
- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Step 3: Stir in the flour and cook for 1 minute to make a roux.
- Step 4: Gradually whisk in the chicken broth and milk, stirring constantly until the mixture thickens, about 5-7 minutes.
- Step 5: Add the diced chicken, peas, carrots, corn, salt, pepper, garlic powder, and onion powder. Mix well and remove from heat.
- Step 6: Roll out one pie crust and place it in a 9-inch pie dish.
- Step 7: Pour the chicken filling into the pie crust, spreading it evenly.
- Step 8: Cover with the second pie crust, sealing the edges and cutting slits in the top to allow steam to escape.
- Step 9: Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Step 10: Let the pot pie cool for a few minutes before serving. Enjoy!
