Ingredients
- 8 ounces chickpea pasta
- 1 head of garlic
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Cut the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 30 minutes until soft.
- Step 3: While the garlic roasts, bring a large pot of salted water to boil and cook the chickpea pasta according to package instructions. Drain and set aside.
- Step 4: In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
- Step 5: Add the cherry tomatoes, zucchini, red bell pepper, and broccoli florets to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
- Step 6: Season the vegetables with dried oregano, salt, and black pepper.
- Step 7: Once the garlic is roasted, squeeze the softened cloves out of their skins and mash into a paste.
- Step 8: Combine the cooked pasta, sautéed vegetables, and roasted garlic in the skillet. Toss to mix well and heat through.
- Step 9: Serve the pasta primavera with a sprinkle of grated Parmesan cheese and fresh basil on top.
