This creamy and hearty clam chowder is a comforting classic, perfect for a cozy meal.

Clam Chowder

Ingredients

  • 4 slices bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 2 cups chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups half-and-half
  • 2 (6.5 ounce) cans chopped clams, with juice
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Step 1: In a large pot, cook the diced bacon over medium heat until crispy, about 5 minutes, then remove and set aside, leaving the drippings in the pot.
  2. Step 2: Add the chopped onion and minced garlic to the pot and sauté for about 3 minutes until the onion is translucent.
  3. Step 3: Stir in the diced potatoes, chicken broth, water, salt, black pepper, and dried thyme, bringing the mixture to a boil.
  4. Step 4: Reduce the heat and simmer for about 15 minutes, or until the potatoes are tender.
  5. Step 5: In a small bowl, whisk together the half-and-half and flour until smooth, then stir into the pot.
  6. Step 6: Add the clams with their juice and the butter, cooking for an additional 5 minutes until the chowder is thickened.
  7. Step 7: Taste and adjust seasoning as necessary, then stir in the crispy bacon and fresh parsley before serving.
