Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, rinsed and drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Step 1: 1. Start by placing the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about 1/2 inch).
- Step 2: 2. Season both sides of the chicken breasts with salt and pepper.
- Step 3: 3. Dredge each chicken breast in the flour, shaking off any excess.
- Step 4: 4. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
- Step 5: 5. Once the oil is hot, add the chicken breasts and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Step 6: 6. In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Step 7: 7. Allow the sauce to reduce for about 2-3 minutes, then stir in the remaining tablespoon of butter until melted.
- Step 8: 8. Return the chicken to the skillet and spoon the sauce over the top. Cook for an additional minute to heat through.
- Step 9: 9. Garnish with chopped parsley before serving.
