These no-bake energy balls are a quick and delicious snack packed with oats, peanut butter, and chocolate chips for a perfect energy boost.
Ingredients
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1/4 cup mini chocolate chips
- 1/4 cup ground flaxseed
- 1/4 cup chopped almonds
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Step 1: In a large bowl, combine the rolled oats, ground flaxseed, chopped almonds, shredded coconut, mini chocolate chips, and salt.
- Step 2: In a small microwave-safe bowl, heat the peanut butter and honey together for about 20-30 seconds until slightly warm and easier to mix.
- Step 3: Add the vanilla extract to the peanut butter and honey mixture, stirring until smooth.
- Step 4: Pour the wet ingredients over the dry ingredients in the large bowl and stir until thoroughly combined.
- Step 5: Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Step 6: Place the energy balls on a baking sheet lined with parchment paper.
- Step 7: Refrigerate the energy balls for at least 30 minutes to help them firm up.
- Step 8: Store the energy balls in an airtight container in the refrigerator for up to a week.
