Energy Balls

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/4 cup chopped almonds
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Step 1: In a large bowl, combine the rolled oats, ground flaxseed, chopped almonds, shredded coconut, mini chocolate chips, and salt.
  2. Step 2: In a small microwave-safe bowl, heat the peanut butter and honey together for about 20-30 seconds until slightly warm and easier to mix.
  3. Step 3: Add the vanilla extract to the peanut butter and honey mixture, stirring until smooth.
  4. Step 4: Pour the wet ingredients over the dry ingredients in the large bowl and stir until thoroughly combined.
  5. Step 5: Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  6. Step 6: Place the energy balls on a baking sheet lined with parchment paper.
  7. Step 7: Refrigerate the energy balls for at least 30 minutes to help them firm up.
  8. Step 8: Store the energy balls in an airtight container in the refrigerator for up to a week.
