Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon hoisin sauce
- 2 teaspoons Chinese five-spice powder
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Step 1: Preheat the oven to 425°F (220°C).
- Step 2: In a small bowl, mix together the soy sauce, sesame oil, hoisin sauce, Chinese five-spice powder, and minced garlic to create a marinade.
- Step 3: Place the chicken thighs in a large bowl and pour the marinade over them, ensuring they are well coated.
- Step 4: Let the chicken marinate for at least 10 minutes while you prepare the vegetables.
- Step 5: On a large sheet pan, combine the sliced red and yellow bell peppers and red onion. Drizzle with vegetable oil and season with salt and pepper.
- Step 6: Place the marinated chicken thighs on top of the vegetables on the sheet pan.
- Step 7: Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
- Step 8: Remove from the oven and let rest for a few minutes before serving.
- Step 9: Garnish the chicken and vegetables with sliced green onions before serving.
