Fried Catfish

Ingredients

  • 4 catfish fillets
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  1. Step 1: Rinse the catfish fillets under cold water and pat them dry with paper towels.
  2. Step 2: In a shallow dish, pour the buttermilk and add the catfish fillets, turning to coat them evenly. Let them soak for about 10 minutes.
  3. Step 3: In another shallow dish, combine the cornmeal, flour, salt, black pepper, paprika, cayenne pepper, and garlic powder.
  4. Step 4: Remove the catfish fillets from the buttermilk, allowing any excess to drip off, and dredge them in the cornmeal mixture, pressing gently to ensure an even coating.
  5. Step 5: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until it reaches 350°F.
  6. Step 6: Carefully place the coated catfish fillets in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. Step 7: Remove the catfish from the skillet and drain on paper towels.
  8. Step 8: Serve the fried catfish hot with lemon wedges on the side.
