This classic frittata is a delightful blend of eggs, fresh vegetables, and cheese, baked to perfection for a satisfying meal.
Ingredients
- 8 large eggs
- 1/4 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1/2 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh basil
Instructions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Step 3: Heat the olive oil in an oven-safe skillet over medium heat.
- Step 4: Add the diced onion and bell peppers to the skillet, cooking until softened, about 5 minutes.
- Step 5: Stir in the chopped spinach and cherry tomatoes, cooking for an additional 2 minutes until the spinach is wilted.
- Step 6: Pour the egg mixture over the vegetables in the skillet, gently stirring to combine.
- Step 7: Sprinkle the Parmesan and mozzarella cheeses evenly over the top.
- Step 8: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
- Step 9: Remove from the oven and let the frittata cool for a few minutes before garnishing with fresh basil.
- Step 10: Slice into wedges and serve warm.
