Frittata

Ingredients

  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. Step 3: Heat the olive oil in an oven-safe skillet over medium heat.
  4. Step 4: Add the diced onion and bell peppers to the skillet, cooking until softened, about 5 minutes.
  5. Step 5: Stir in the chopped spinach and cherry tomatoes, cooking for an additional 2 minutes until the spinach is wilted.
  6. Step 6: Pour the egg mixture over the vegetables in the skillet, gently stirring to combine.
  7. Step 7: Sprinkle the Parmesan and mozzarella cheeses evenly over the top.
  8. Step 8: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
  9. Step 9: Remove from the oven and let the frittata cool for a few minutes before garnishing with fresh basil.
  10. Step 10: Slice into wedges and serve warm.
