This Garlic Butter Shrimp Scampi is a quick and delicious pasta dish loaded with succulent shrimp, aromatic garlic, and a hint of lemon.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine pasta
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup dry white wine
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Cook the linguine in a large pot of salted boiling water according to package instructions until al dente, then drain and set aside.
- Step 2: In a large skillet, melt the butter and olive oil over medium heat.
- Step 3: Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
- Step 4: Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side.
- Step 5: Pour in the white wine and lemon juice, stirring to combine and let simmer for 2 minutes to allow the flavors to meld.
- Step 6: Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce.
- Step 7: Stir in the fresh parsley and grated Parmesan cheese, mixing well.
- Step 8: Serve immediately, garnishing with additional parsley and Parmesan if desired.
