Garlic Butter Shrimp Scampi

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine pasta
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup dry white wine
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Step 1: Cook the linguine in a large pot of salted boiling water according to package instructions until al dente, then drain and set aside.
  2. Step 2: In a large skillet, melt the butter and olive oil over medium heat.
  3. Step 3: Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  4. Step 4: Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side.
  5. Step 5: Pour in the white wine and lemon juice, stirring to combine and let simmer for 2 minutes to allow the flavors to meld.
  6. Step 6: Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce.
