Ingredients
- 2 pounds small to medium potatoes (Yukon Gold or baby potatoes)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Step 1: Preheat your oven to 450°F (230°C).
- Step 2: Wash the potatoes thoroughly and place them in a large pot. Fill the pot with water and add a pinch of salt.
- Step 3: Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
- Step 4: Drain the potatoes and let them cool for a few minutes until they are easier to handle.
- Step 5: On a large baking sheet lined with parchment paper, place the potatoes and use a potato masher or the bottom of a cup to gently smash each potato to about 1/2 inch thickness.
- Step 6: In a small bowl, mix together the olive oil, minced garlic, salt, and black pepper.
- Step 7: Drizzle the garlic oil mixture over the smashed potatoes, ensuring they are well coated.
- Step 8: Bake in the preheated oven for about 20-25 minutes, or until the edges are crispy and golden brown.
- Step 9: Remove from the oven and sprinkle with chopped parsley and grated Parmesan cheese, if using.
