Gochujang Cauliflower Bites

Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Step 1: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, whisk together the flour, almond milk, garlic powder, onion powder, salt, and black pepper to form a smooth batter.
  3. Step 3: Dip each cauliflower floret into the batter, allowing any excess to drip off, and place them on the prepared baking sheet.
  4. Step 4: Bake the cauliflower bites for 20 minutes, or until they begin to turn golden brown.
  5. Step 5: While the cauliflower is baking, prepare the spicy gochujang sauce by combining the gochujang, soy sauce, maple syrup, rice vinegar, and sesame oil in a small bowl.
  6. Step 6: Once the cauliflower bites are baked, remove them from the oven and let them cool for a few minutes.
  7. Step 7: Toss the baked cauliflower bites in the spicy gochujang sauce until they are evenly coated.
  8. Step 8: Return the coated cauliflower bites to the baking sheet and bake for an additional 10 minutes, or until they are crispy and caramelized.
  9. Step 9: Garnish the finished cauliflower bites with sesame seeds and sliced green onions before serving.
