Gochujang Chicken

Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, diced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Step 1: Preheat the oven to 425°F (220°C).
  2. Step 2: In a bowl, mix gochujang, soy sauce, honey, sesame oil, minced garlic, and grated ginger to make the marinade.
  3. Step 3: Add chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Step 4: On a large sheet pan, combine Brussels sprouts, sweet potatoes, and red onion. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  5. Step 5: Place the marinated chicken thighs on the sheet pan, arranging them between the vegetables.
  6. Step 6: Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Step 7: Remove from the oven and sprinkle with sesame seeds and sliced green onions before serving.
