Greek Chicken and Orzo

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 1 3/4 cups chicken broth
  • 1 lemon, juiced and zested
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Season the chicken thighs with oregano, paprika, salt, and pepper.
  3. Step 3: Heat olive oil in a large ovenproof skillet over medium-high heat.
  4. Step 4: Sear the chicken thighs on both sides until golden brown, about 5 minutes per side, then remove from the skillet.
  5. Step 5: Add orzo to the skillet and toast for 1-2 minutes until lightly golden.
  6. Step 6: Pour in the chicken broth, lemon juice, and lemon zest; stir to combine.
  7. Step 7: Return the chicken thighs to the skillet, nestling them into the orzo.
  8. Step 8: Scatter cherry tomatoes and olives around the chicken.
  9. Step 9: Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the orzo is tender.
  10. Step 10: Remove from the oven, sprinkle with feta cheese and fresh parsley before serving.
