Green Chile Enchiladas

Ingredients

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 2 cups green chile sauce
  • 1 cup sour cream
  • 2 cups shredded Monterey Jack cheese
  • 1 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent.
  3. Step 3: In a bowl, combine shredded chicken, sautéed onions, garlic powder, cumin, salt, and pepper.
  4. Step 4: In a separate bowl, mix half of the green chile sauce with sour cream until well combined.
  5. Step 5: Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Step 6: Spread a small amount of the green chile sauce mixture on the bottom of a baking dish.
  7. Step 7: Take a tortilla, fill it with a portion of the chicken mixture, roll it up, and place it seam-side down in the baking dish.
  8. Step 8: Repeat with the remaining tortillas and chicken mixture.
  9. Step 9: Once all the enchiladas are in the dish, pour the remaining green chile sauce mixture over the top.
  10. Step 10: Sprinkle the shredded Monterey Jack cheese evenly over the enchiladas.
  11. Step 11: Cover the baking dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  12. Step 12: Remove from the oven and let cool for a few minutes.
  13. Step 13: Garnish with fresh cilantro before serving.
