Ingredients
- 12 corn tortillas
- 2 cups shredded cooked chicken
- 2 cups green chile sauce
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- 1 cup diced onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent.
- Step 3: In a bowl, combine shredded chicken, sautéed onions, garlic powder, cumin, salt, and pepper.
- Step 4: In a separate bowl, mix half of the green chile sauce with sour cream until well combined.
- Step 5: Warm the corn tortillas in a dry skillet or microwave until pliable.
- Step 6: Spread a small amount of the green chile sauce mixture on the bottom of a baking dish.
- Step 7: Take a tortilla, fill it with a portion of the chicken mixture, roll it up, and place it seam-side down in the baking dish.
- Step 8: Repeat with the remaining tortillas and chicken mixture.
- Step 9: Once all the enchiladas are in the dish, pour the remaining green chile sauce mixture over the top.
- Step 10: Sprinkle the shredded Monterey Jack cheese evenly over the enchiladas.
- Step 11: Cover the baking dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Step 12: Remove from the oven and let cool for a few minutes.
- Step 13: Garnish with fresh cilantro before serving.
