Grilled Chicken and Vegetable Skewers are a delicious and colorful dish perfect for a summer barbecue or a healthy dinner.
Ingredients
- 1.5 pounds boneless, skinless chicken breast
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large zucchini
- 1 large red onion
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Step 1: Soak wooden skewers in water for at least 30 minutes if using.
- Step 2: Cut the chicken breast into 1-inch cubes and place in a large bowl.
- Step 3: In a small bowl, mix together olive oil, soy sauce, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
- Step 4: Pour the marinade over the chicken, cover, and refrigerate for at least 30 minutes.
- Step 5: While the chicken marinates, cut the red and yellow bell peppers, zucchini, and red onion into 1-inch pieces.
- Step 6: Preheat the grill to medium-high heat.
- Step 7: Thread the marinated chicken and vegetables alternately onto the skewers.
- Step 8: Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Step 9: Remove from the grill and let rest for a few minutes before serving.
