Grilled Lemon Herb Chicken Breast

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh rosemary
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced for garnish

Instructions

  1. Step 1: In a medium bowl, whisk together olive oil, lemon juice, parsley, thyme, rosemary, garlic, salt, and pepper to make the marinade.
  2. Step 2: Place the chicken breasts in a large resealable plastic bag or shallow dish, and pour the marinade over the chicken.
  3. Step 3: Seal the bag or cover the dish, and refrigerate for at least 30 minutes to allow the flavors to infuse the chicken.
  4. Step 4: Preheat the grill to medium-high heat and lightly oil the grill grates.
  5. Step 5: Remove the chicken from the marinade, allowing excess to drip off, and place on the grill.
  6. Step 6: Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is no longer pink inside.
  7. Step 7: Remove the chicken from the grill and let it rest for 5 minutes before serving.
  8. Step 8: Garnish with lemon slices and serve immediately.
