Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh rosemary
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
Instructions
- Step 1: In a medium bowl, whisk together olive oil, lemon juice, parsley, thyme, rosemary, garlic, salt, and pepper to make the marinade.
- Step 2: Place the chicken breasts in a large resealable plastic bag or shallow dish, and pour the marinade over the chicken.
- Step 3: Seal the bag or cover the dish, and refrigerate for at least 30 minutes to allow the flavors to infuse the chicken.
- Step 4: Preheat the grill to medium-high heat and lightly oil the grill grates.
- Step 5: Remove the chicken from the marinade, allowing excess to drip off, and place on the grill.
- Step 6: Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is no longer pink inside.
- Step 7: Remove the chicken from the grill and let it rest for 5 minutes before serving.
- Step 8: Garnish with lemon slices and serve immediately.
