Grilled Lemon Herb Chicken Salad

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Step 1: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  2. Step 2: Add the chicken breasts to the bowl and toss to coat. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  3. Step 3: Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked.
  4. Step 4: Let the grilled chicken rest for 5 minutes, then slice into strips.
  5. Step 5: In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. Step 6: Arrange the sliced chicken on top of the salad and drizzle with balsamic vinaigrette.
  7. Step 7: Toss the salad gently to mix all ingredients and serve immediately.
