A fresh and zesty Grilled Lemon Herb Chicken Salad perfect for a light and satisfying meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinaigrette
Instructions
- Step 1: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Step 2: Add the chicken breasts to the bowl and toss to coat. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Step 3: Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked.
- Step 4: Let the grilled chicken rest for 5 minutes, then slice into strips.
- Step 5: In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Step 6: Arrange the sliced chicken on top of the salad and drizzle with balsamic vinaigrette.
- Step 7: Toss the salad gently to mix all ingredients and serve immediately.
