Harissa Chicken with Olives and Orzo

Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons harissa paste
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup green olives, pitted and halved
  • 1 lemon, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: In a bowl, mix the harissa paste, olive oil, ground cumin, smoked paprika, salt, and pepper.
  3. Step 3: Coat the chicken thighs with the harissa mixture, ensuring they are evenly covered.
  4. Step 4: Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs for 3-4 minutes on each side until browned.
  5. Step 5: Remove the chicken from the skillet and set aside.
  6. Step 6: In the same skillet, add the orzo and stir for about 1 minute to lightly toast.
  7. Step 7: Pour in the chicken broth and add the green olives, stirring to combine.
  8. Step 8: Place the chicken thighs back into the skillet, nestling them into the orzo and olives.
  9. Step 9: Top with lemon slices and transfer the skillet to the preheated oven.
  10. Step 10: Bake for 20-25 minutes, or until the chicken is cooked through and the orzo is tender.
  11. Step 11: Garnish with fresh parsley before serving.
