Healthy Stuffed Shells

Ingredients

  • 12-15 large jumbo pasta shells
  • 1 cup ricotta cheese (part-skim or low-fat)
  • 1 cup spinach, chopped (fresh or frozen, thawed and drained)
  • 1/2 cup shredded mozzarella cheese (part-skim)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce (low-sodium)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. Step 3: In a large mixing bowl, combine the ricotta cheese, chopped spinach, shredded mozzarella cheese, grated Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Step 4: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish.
  5. Step 5: Stuff each cooked pasta shell with the ricotta and spinach mixture, and place them in the baking dish on top of the marinara sauce.
  6. Step 6: Pour the remaining marinara sauce over the stuffed shells, covering them evenly.
  7. Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Step 8: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Step 9: Remove from the oven and let it cool for a few minutes before serving.
  10. Step 10: Garnish with fresh basil or parsley if desired.
