Ingredients
- 12-15 large jumbo pasta shells
- 1 cup ricotta cheese (part-skim or low-fat)
- 1 cup spinach, chopped (fresh or frozen, thawed and drained)
- 1/2 cup shredded mozzarella cheese (part-skim)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce (low-sodium)
- Fresh basil or parsley for garnish (optional)
Instructions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- Step 3: In a large mixing bowl, combine the ricotta cheese, chopped spinach, shredded mozzarella cheese, grated Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Step 4: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish.
- Step 5: Stuff each cooked pasta shell with the ricotta and spinach mixture, and place them in the baking dish on top of the marinara sauce.
- Step 6: Pour the remaining marinara sauce over the stuffed shells, covering them evenly.
- Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes.
- Step 8: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Step 9: Remove from the oven and let it cool for a few minutes before serving.
- Step 10: Garnish with fresh basil or parsley if desired.
