Ingredients
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 4 garlic cloves, minced
- 1 lemon, quartered
- 1 onion, quartered
- 1 cup chicken broth (optional)
Instructions
- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: Rinse the chicken under cold water and pat it dry with paper towels.
- Step 3: In a small bowl, mix together the olive oil, salt, black pepper, rosemary, thyme, parsley, and minced garlic.
- Step 4: Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
- Step 5: Stuff the cavity of the chicken with the quartered lemon and onion.
- Step 6: Place the chicken breast side up in a roasting pan. If desired, pour the chicken broth into the bottom of the pan to keep the chicken moist.
- Step 7: Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C), and the juices run clear.
- Step 8: Baste the chicken with the pan juices halfway through cooking for extra flavor.
- Step 9: Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
- Step 10: Serve with your choice of sides.
