Herb-Roasted Chicken Thighs

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Pat the chicken thighs dry with paper towels and place them in a large bowl.
  3. Step 3: Drizzle olive oil over the chicken and season with salt, black pepper, rosemary, thyme, garlic, paprika, and cayenne pepper.
  4. Step 4: Toss the chicken to ensure it is evenly coated with the oil and seasonings.
  5. Step 5: Arrange the chicken thighs in a single layer in a baking dish, skin side up, and tuck lemon slices around them.
  6. Step 6: Pour chicken broth into the baking dish around the chicken, ensuring not to pour over the skin.
  7. Step 7: Brush melted butter over the chicken thighs to promote browning.
  8. Step 8: Place the baking dish in the oven and roast for 35 to 40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
  9. Step 9: Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
