Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 3 cloves garlic, minced
- 1 lemon, sliced
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth
- 2 tablespoons unsalted butter, melted
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Pat the chicken thighs dry with paper towels and place them in a large bowl.
- Step 3: Drizzle olive oil over the chicken and season with salt, black pepper, rosemary, thyme, garlic, paprika, and cayenne pepper.
- Step 4: Toss the chicken to ensure it is evenly coated with the oil and seasonings.
- Step 5: Arrange the chicken thighs in a single layer in a baking dish, skin side up, and tuck lemon slices around them.
- Step 6: Pour chicken broth into the baking dish around the chicken, ensuring not to pour over the skin.
- Step 7: Brush melted butter over the chicken thighs to promote browning.
- Step 8: Place the baking dish in the oven and roast for 35 to 40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
- Step 9: Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
