Honey Butter Smashed Potatoes

Ingredients

  • 1.5 pounds baby potatoes
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • Olive oil for drizzling

Instructions

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15 minutes.
  3. Step 3: Drain the potatoes and let them cool for a few minutes on a baking sheet lined with parchment paper.
  4. Step 4: Using a fork or potato masher, gently press down on each potato to slightly flatten it.
