Ingredients
- 1.5 pounds baby potatoes
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- Olive oil for drizzling
Instructions
- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15 minutes.
- Step 3: Drain the potatoes and let them cool for a few minutes on a baking sheet lined with parchment paper.
- Step 4: Using a fork or potato masher, gently press down on each potato to slightly flatten it.
- Step 5: In a small bowl, mix together the melted butter, honey, minced garlic, salt, and black pepper.
- Step 6: Drizzle the honey butter mixture over the smashed potatoes, ensuring each potato is well coated.
- Step 7: Drizzle a little olive oil over the potatoes for extra crispiness.
- Step 8: Bake in the preheated oven for 20-25 minutes or until the edges of the potatoes are golden and crispy.
