Ingredients
- 4 boneless, skinless chicken thighs
- 1/4 cup honey
- 3 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 pound baby potatoes, halved
- 1 cup baby carrots
- 1 cup broccoli florets
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, thyme, oregano, salt, and pepper.
- Step 3: Heat olive oil in a large ovenproof skillet over medium-high heat.
- Step 4: Add chicken thighs to the skillet and sear until golden brown, about 3-4 minutes per side.
- Step 5: Remove chicken from the skillet and set aside.
- Step 6: In the same skillet, add potatoes and carrots, stirring occasionally, until they begin to soften, about 5 minutes.
- Step 7: Return chicken to the skillet, placing it on top of the vegetables.
- Step 8: Pour the honey garlic sauce over the chicken and veggies.
- Step 9: Transfer the skillet to the preheated oven and bake for 20 minutes.
- Step 10: Add broccoli florets to the skillet and continue to bake until the chicken is cooked through and the broccoli is tender, about 10 more minutes.
- Step 11: Serve hot, spooning the sauce over the chicken and vegetables.
