Ingredients
- 3 cups cooked rice
- 1 ½ pound boneless, skinless chicken breasts, diced
- 1 ½ cup broccoli florets (fresh or frozen)
- 1 ½ cup carrots, sliced
- ¾ cup onion, diced
- 4 ½ cloves garlic, minced
- ¾ cup honey
- ⅓ cup soy sauce
- 3 tablespoons olive oil
- 1 ½ teaspoon ground ginger
- ¾ teaspoon black pepper
- ¾ teaspoon salt
- 1 ½ cup shredded cheese (optional)
- ⅓ cup green onions, sliced (for garnish)
Instructions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
- Step 3: Add the minced garlic, onion, broccoli, and carrots to the skillet. Sauté for another 3-4 minutes until the vegetables are tender.
- Step 4: In a small bowl, whisk together honey, soy sauce, ground ginger, black pepper, and salt.
- Step 5: Pour the honey garlic sauce over the chicken and vegetable mixture. Stir well to combine and let it simmer for 2-3 minutes.
- Step 6: In a large mixing bowl, combine the cooked rice with the chicken and vegetable mixture. Mix until well incorporated.
- Step 7: Transfer the mixture to a greased 9x13 inch casserole dish. Spread it out evenly.
- Step 8: If desired, sprinkle shredded cheese on top of the casserole.
- Step 9: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes.
- Step 10: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Step 11: Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
