Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 3 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 can chickpeas, drained and rinsed
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 2 green onions, sliced
- Sesame seeds for garnish
- Salt and pepper to taste
Instructions
- Step 1: Rinse the quinoa under cold water, then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
- Step 2: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Step 3: Stir in the soy sauce, honey, rice vinegar, and sesame oil to the skillet. Bring the mixture to a simmer.
- Step 4: Add the chickpeas to the skillet, stirring to coat them in the sauce. Cook for about 5 minutes, allowing them to absorb the flavors.
- Step 5: Add the broccoli florets and red bell pepper slices to the skillet. Cook for another 5-7 minutes until the vegetables are tender-crisp.
- Step 6: Mix the cooked quinoa into the skillet with the chickpeas and vegetables. Stir well to combine and heat through.
- Step 7: Season with salt and pepper to taste, then remove from heat.
- Step 8: Divide the mixture into bowls and garnish with sliced green onions and sesame seeds before serving.
