Honey Ginger Chicken and Broccoli

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Step 2: In a large bowl, combine olive oil, honey, soy sauce, grated ginger, minced garlic, rice vinegar, sesame oil, and cornstarch. Whisk until well combined.
  3. Step 3: Add the chicken pieces to the bowl and toss to coat them evenly in the marinade.
  4. Step 4: Spread the chicken pieces out in a single layer on one half of the prepared sheet pan.
  5. Step 5: Place the broccoli florets in the same bowl, using any remaining marinade, and toss to coat. Arrange the broccoli on the other half of the sheet pan.
  6. Step 6: Season the chicken and broccoli with salt and pepper to taste.
  7. Step 7: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the broccoli is tender and slightly charred.
  8. Step 8: Remove from the oven and let it rest for a few minutes.
  9. Step 9: Garnish with sesame seeds and sliced green onions before serving.
