Ingredients
- 1 lb beef short ribs (or beef bulgogi)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup sesame oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon rice vinegar
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon sesame seeds
- 2 green onions, chopped
- 1 lb assorted vegetables (e.g., mushrooms, zucchini, bell peppers, onions)
- Lettuce leaves for wrapping
- Cooked rice for serving
Instructions
- Step 1: In a bowl, mix together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, gochujang, and sesame seeds to create a marinade.
- Step 2: Add the beef short ribs (or bulgogi) to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Step 3: Prepare the vegetables by cutting them into bite-sized pieces.
- Step 4: Preheat a grill or grill pan over medium-high heat.
- Step 5: Remove the beef from the marinade and grill for about 4-5 minutes on each side, or until cooked to your desired doneness.
- Step 6: While the beef is grilling, toss the assorted vegetables in a little sesame oil and grill them until tender, about 3-4 minutes.
- Step 7: Once cooked, remove the beef and vegetables from the grill and let them rest for a few minutes.
- Step 8: To serve, place grilled beef and vegetables on a lettuce leaf, add a bit of rice, and garnish with chopped green onions.
- Step 9: Wrap the lettuce around the filling and enjoy your Korean BBQ!
