Ingredients
- 1 pound beef chuck or brisket, cut into 2-inch cubes
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 cups beef broth
- 12 small corn tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup finely chopped onion
- 1/2 cup chopped cilantro
- Lime wedges, for serving
Instructions
- Step 1: Combine gochujang, soy sauce, sesame oil, garlic, ginger, black pepper, and salt in a large bowl.
- Step 2: Add the beef cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight.
- Step 3: Preheat the oven to 325°F (160°C).
- Step 4: In a large oven-safe pot, add the marinated beef and pour in the beef broth. Bring to a simmer over medium heat.
- Step 5: Cover the pot and transfer to the preheated oven. Cook for 2.5 to 3 hours or until the beef is tender and pulls apart easily.
- Step 6: Remove the beef from the oven and shred it using two forks. Reserve the cooking liquid.
- Step 7: Heat a non-stick skillet over medium heat. Dip each tortilla briefly in the reserved cooking liquid, then place in the skillet.
- Step 8: Sprinkle mozzarella cheese on one half of the tortilla, add some shredded beef, onion, and cilantro, then fold the tortilla over to form a taco.
- Step 9: Cook each taco until the cheese is melted and the tortillas are crispy and golden brown.
- Step 10: Serve the tacos with lime wedges and additional cilantro and onion as desired.
